In looking at this photo of how only the forequarter of the animal is used, AND having read Kleinman's article where he says "Sefer HaChinuch refined the guidelines of bal tashcit to forbid wasting any food resrouces, down to even the tinies of morsels of food. It reminded me of the legends of the Native Americans and the Buffalo. Which reminded me of one of my favorite Far Side cartoons...
